i’ve been thinking a lot about breakfast lately. given the fact that i haven’t had quite as much time in the mornings as i used to, it’s sort of strange that it’s been so much of a hyperfixation. thanks to the early morning sunshine and my new routine, i’m naturally waking up early and have been able to give myself the time, even on busy mornings, to sit down for 10 minutes and eat something simple, all the while planning what my special weekend-slash-day-off breakfast will look like.
to me, “special” doesn’t have to mean hard to make, a lot of ingredients or anything particularly involved, it just has to be made and eaten with intention and joy. for me, this could mean a biscuit baked from the freezer and slathered with cream cheese and/or jam, half a grapefruit eaten with my beloved grapefruit spoon, a simple scrambled egg sandwich (maybe even with chips?), a slice of cake that’s baked once and enjoyed all week, my (soon to be?) infamous yogurt and granola bowls (i call them yogi bowls)—you get the picture.
