I made this tonight and it was delicious! Thank you. I have so many tomatoes - this is a good way to use them. It is very filling - amazing what one egg yolk does.
Love the sound of this (and am always here for interesting takes on the Carbonara concept!). Will add to my "to cook" list before the summer is out. And yes, I think some crunchy guanciale (which I still have some of hiding in the freezer) would indeed go nicely with this - even at the risk of slightly undermining the tomato flavour.
