Is there an advantage to doing that overnight rise once vs twice? If one rise is as good as two, which one is best - before or after the dough is in the pan? Iām about to make this so I gotta know!!!
hey holly, i just saw your message, sorry for the delay! the focaccia only needs one overnight rest (if any). the other two proofs should take place at room temp. i hope that helps!
