hey holly, thanks for asking! i made quite a few changes to the overall ingredient list and ratios of the recipe which i could fully detail here, but i'm not sure how interesting it is unless you have access to the original recipe. to highlight a few things: i omitted apple sauce, swapped shredded parsnip for a mix of carrot, zucchini, and apple, added buckwheat flour, reduced the amount of chocolate, added oats.
the original recipe also called for greasing the muffin tin and "lining" it with millet for a extra crunch on bottoms and outsides of the muffins, which i omitted here for not only ease but because i felt it didn't actually add much that you can't get from using the millet/buckwheat groats on top of the muffins. i hope that answers your question!
no wrong questions here! they would absolutely work without the chocolate. if you still wanted some texture you could add an equal amount of chopped toasted nuts or dried fruits.
