I did a meat version with broken lasagne sheets which was delicious but will try your potato version next time. And agreed on adding pinenuts to the butter - I do the same!
yeah i’ve seen various takes on it over the years, but never with potatoes 🥔 haha yeah manti are such tiny dumplings, a very good example of what “labor of love” means.
What's funny about that viral recipe is that this dish is definitely already a thing. I have several old Armenian church cookbooks that contain recipes for "mock" manti, with Italian meat sauce, shell pasta, and yogurt. I did a recipe for Dan Pashman's Anything's Pastable that was more true to the original (which I called "The Faux Manti") with a sauce with the same flavors as the lamb-tomato broth, ground lamb, and all the usual garnishes—parsley, sumac, Maras pepper, and garlic powder. I'm vegetarian these days, and I need to make a lentil version soon (black lentils are my current go-to protein for bolognese RN).
so true! with viral recipes people might think it's a genius or completely new idea, but half the time it's something that already exists and many people already know and love. it's sort of taken out of its original context and given a new one which can be both good and bad i guess.
