That sounds like one damn fine sandwich! A good reminder to make sure I eat my fair share of tomato sandwiches before the season is over (I'm partial to a simple combo of tomatoes + mayo + thinly sliced onions + salt and pepper). But then again, end of tomato season also signals the beginning of fig season so we have pizza Bianca + ripe figs + torn mozzarella + prosciutto still to look forward to!

So many options, so little time! I also just love slicing, salting (or sugaring) and eating them. It’s pretty much a win no matter what when you have a great tomato!

So true - a perfect tomato really needs little (if anything else). I also love cutting any and all leftover tomatoes of all shapes and sizes and roasting them in the oven with plenty of olive oil and garlic and maybe even some anchovies. Either to stir some pasta through at the end for the ultimate low effort pasta sauce or chuck it all in a blender for the most delicious tomato soup to have with a cheese toastie.
